Marinated Green Bean and Waymac Farms Mushroom Salad


Description

Named after Lakefield, ON’s Waymac Farms, this dish graced the menu of our 2015 World Day Dinner.

Ingredients

3 cups
mixed mushrooms, brushed free of dirt, ends trimmed
2 cups
green beans, ends removed, chopped into thirds
2 cloves
garlic, sliced thinly
1 teaspoon
oregano
2 pinches
chili flakes
2 teaspoons
apple cider vinegar
1 tablespoon
butter
1 tablespoon
olive oil
 
salt and pepper to taste

Instructions

  1. In a large pot of boiling, salted water, blanch the green beans until tender crisp.
  2. Drain and chill under cold water. Drain again.
  3. Heat a large skillet over medium heat; melt the butter and olive oil.
  4. Cook the mushrooms until golden brown and softened. Season with salt and pepper.
  5. Stir in garlic, oregano and chill flakes and cook for five minutes.
  6. Add cider vinegar, salt and pepper to taste.
  7. Combine with green beans and serve.
