Chicken Cutlets

Description

Leave the frozen, store bought breaded chicken behind and make it yourself with this recipe for chicken cutlets. A kid-friendly favorite.

Ingredients

4
chicken breasts
1 cup
breadcrumbs
2
eggs (lightly mixed)
1⁄2 cups
flour
 
salt and pepper
 
Italian seasoning
2 tablespoons
oil

Instructions

  1. Place the flour, eggs, and breadcrumbs in separate pans. Add salt and pepper and some Italian seasoning to the flour.
  2. Put the chicken breasts in the freezer until slightly frozen, about 10 minutes. With a sharp knife cut chicken breasts in half lengthways. Put a chicken breast section inside a clean plastic bag. Bash the chicken down with a rolling pin until about 1/2 thick. Repeat with the other pieces.
  3. Heat pan under medium heat then add the oil. Put a piece of chicken in the flour, shake off excess. Dip in egg, shake off excess. Place in pan of breadcrumbs and press down. Turn the breast over in the breadcrumbs and press down. Shake off excess breadcrumbs.
  4. Fry chicken pieces in oil until underside becomes golden brown. About two minutes. Turn over. Fry two minutes
