Apple and Cheddar Quesadillas


The sweetness of apples makes a perfect partner to the sharpness of cheddar cheese. Enjoy any time of the day for a quick and delicious meal!


granny smith apples ( cored and sliced)
small whole-wheat tortillas
1 1⁄2 cups
grated cheddar ((smoked cheddar would be delicious))
2 cups
baby spinach
nonstick cooking spray or olive oil
plain greek yogurt or labneh for serving, along with hummus.


  1. Sprinkle 1 tortilla with cheese, spinach and apples. Press another tortilla on top to make a quesadilla.
  2. Heat a non-stick skillet over medium-high heat and spray with cooking spray (or add a little bit of oil).
  3. Cook the quesadilla for 2 - 3 minutes a side. Repeat with remaining tortillas. Serve warm with yogurt dip or hummus.
