Just see if anyone can guess the secret ingredient in these cookies that boost fibre and protein...that's right...lentils!
Preheat the oven to 375 F. Use a stand mixer or a food processor to cream the butter and sugar together. Add the egg, vanilla and lentil puree and pulse until smooth. Place the puree in a large bowl.
In a separate bowl, whisk together the remaining ingredients, except the chocolate chips. Use a wooden spoon and mix the dry ingredients into the puree. Gently fold in the chocolate chips.
Bake for 12 minutes. The cookies should be golden brown and starting to set, but still soft in the centre.
To create a lentil puree place one cup of drained, cooked or canned lentils in a food processor. Add 1/4 cup of water and puree until smooth.
